‘I created this classic Irish whiskey fruit cake for guests at Blackrock House, my luxury Bed & Breakfast in Portrush for a real taste of the Causeway Coast! It’s delicious on its own, buttered for afternoon tea or with a chunk of cheese on the fairway!
